1324. Vanilla Buttercream Frosting


Finding a recipe for buttercream frosting which you can depend on every time may be quite the challenge. This Vanilla Buttercream Frosting is versatile in terms that you can let it remain vanilla, or flavor with other essences (almond) or citrus zest (lemon, orange).
What makes it stand out and successful every time is that it starts with whipping cold butter, resulting in a frosting you can pipe immediately on your cake or cupcakes.


Ingredients:

1 1/2 cup (300g) butter, cold.
5 cups (650g) powdered sugar
2 1/2 tsp vanilla
2 Tbsp heavy cream



Method:

Cut the butter into pieces. Using the paddle attachment, whip the butter for 5-7 minutes, scraping down the bowl occasionally, beating until the butter looks light in color.
Add 2 cups of sifted powdered sugar and mix on low speed until incorporated into the butter then add the vanilla extract and mix to combine. Beat for about 60 seconds.
Next, add another 2 cups of sifted powdered sugar and beat on low speed until sugar is incorporated. Increase speed to medium-high and beat for 3 minutes.
Add last 1 cup sifted powdered sugar along with the heavy whipping cream. Beat on low until the ingredients start to mix together. Increase speed to medium-high and beat for another 3-5 minutes to whip additional air into the frosting.
Can be used immediately to pipe over cupcakes.
