1403. Berry Mango Pudding


This was a refreshing end to a wonderful iftar over Ramadan. Key word being refreshing. It is a tropical fruit puddling-like dessert laden with Arabian flavors in the forms of fragrant rose water, orange blossom, saffron, and pistachio.
It is a dessert to be served in small bowls with spoons, and it is essential that it be thoroughly chilled before serving. I find that using partially-thawed mango puree helps a lot in the chill/refreshing factor.




Ingredients:

1kg alfonso mango puree, partially thawed
1 can sweet condensed milk
2 Tbsp rose water
1 Tbsp orange blossom water
1/2 tsp saffron
1 cup fresh raspberries
1 cup fresh blueberries
1 cup fresh alfonso mango cubes
1/2 cup pomegranate seeds
1/4 cup pistachio slivers


Method:

In a food processor, blitz the partially thawed mango and the can of sweet condensed milk until combined.
In a large bowl, pour the mango mixture and mix manually with the rosewater, orange blossom, and saffron. Gently stir in half the raspberries, half the blueberries, half the mango chunks, half the pomegranate, and half the pistachio.
Pour the lot in your serving bowl.
Top with the remaining half of the fresh fruit and pistachio.
Chill thoroughly before serving.
