1417. Iraqi Cucumber and Salt


As a child, our main family meal was lunch, and not dinner as is common in westernized cultures. My father, may Allah bless his soul, would often prefer a light dinner. Horizontally cut Arabian cucumbers sprinkled with salt had a recurrent presence on his plate.
This is in no way a recipe, but it is apparently an Iraqi thing that merits exposure and reviving. It is common to serve the cucumbers beside some fresh farmer's cheese or lebne. Also, the cucumbers are served with a salt shaker because they should be salted just before biting into them. If you salt them too soon the moisture will be drawn out and they will lose their crunch.
