1436. Baked Pesto Salmon


Sometimes, shortcuts are warranted. Using ready made pesto and jarred sun-dried tomatoes make this a quick and delicious three-ingredients recipe. You don't even need salt or pepper since the pesto is already seasoned. Salmon just might be the fish version on chicken, in the sense that you can never have too many ways to cook it.
Served alongside a huge salad, and perhaps some potatoes or rice, this is a great family recipe that is wholesome and does not compromise on taste.



Ingredients:

salmon fillets
basil pesto
sun-dried tomatoes



Method:

Preheat oven to 350F.
Lay salmon fillets skin-side down, spread pesto over the surface (amount will vary from one teaspoon to one tablespoon depending on the size of your fillet), and arrange some sliced sun dried tomato over it all.
Bake for 12-15 minutes until cooked through.Serve warm with a huge salad, and perhaps some potatoes or rice.
