1441. Palestinian Akawi Shatta Cheese Rolls


Shatta is a Palestinian red chilli condiment made by many households and accompanies their dining table at all times. Akawi is a Palestinian cheese that is commonly soaked in water to de-salinate it before its use in kunafa. In this recipe, I will be giving a guideline on making these Palestinian cheese rolls bursting with Palestinian flavors.
Obviously, the level of heat is subjective to personal preference. So is the mix of cheeses used; you can use a single kind of cheese or the entire suggested mix). Furthermore, the brand of cheese is also significant because different manufacturers use varying levels of salt, which might call for a brief desalination process (cut the cheese, soak in water for a couple of hours, change water every so often).


Ingredients:

Spring roll pastry
akawi cheese, grated
haloomi cheese, grated
mozzarella cheese, grated
shatta
fresh mint, chopped


Method:

In a bowl, mix the grated cheese with the chopped mint and shatta.
Fill the spring roll pastry and form into long finger rolls. Be sure to seal the sides well to avoid the cheese leaking during frying.
You can store the cheese rolls in a tightly sealed ziplock bag in the freezer.
To consume, fry in medium-hot oil until golden and crispy.
