1498. Two-Ingredient Tomato Sauce (No Cook)


I think this is a recipe worthy of the tag "genius recipe". Barring salt, all you need are tomatoes and butter. The result is a fluffy pale orange cloud bursting with tomato flavor ready to melt and sheen over anything hot.
Pasta is an obvious contender, and frankly quite irresistible to try. Toast is another idea, as are scrambled eggs. Let your imagination go wild. Be sure to thoroughly de-seed the cherry tomatoes so the final result will not end up watery and separated.


Ingredients:

250g cherry tomatoes
100g butter, soft
salt


Method:

Halve the cherry tomatoes and thoroughly de-seed them. Discard or plant the seeds.
In a high-powered blender, or a food processor, pulverize the tomatoes to a fine slush.
Add the softened room temperature butter and the salt to taste.
Blitz again for a couple of minutes. It might seem that the mixture will never homogenize, but keep at it.
Can be used immediately over anything hot, or stored in a jar, covered and refrigerated until needed.
