1475. Pesto Cream Gnocchi


If you made gnocchi, good for you! Treat yourself to this creamy cheesy pesto gnocchi, using the fruits of your labor. If you just bough gnocchi off the shelve, way to go; treat yourself to this too. My favorite part about the sauce is that you literally put all the sauce ingredients in a pot and simmer.
Drop in your cooked gnocchi, and you're good to go. But wait! It is so worth it to take an extra five minutes, sprinkle the surface with extra mozzarella and boil it just a tiny bit.



Ingredients:

1 batch gnocchi
1 cup cream
1/4 cup water
2 Tbsp butter
1/2 cup basil pesto
1/2 cup freshly grated parmesan
1/2 cup mozzarella, plus extra



Method:

Make the sauce first by combining everything except the gnocchi in a pot and bringing it to a simmer.
Cook gnocchi in salted boiled water until they float. Transfer using a slotted spoon to the sauce and simmer until desired thickness is achieved.
Transfer to serving dish, sprinkle with extra mozzarella, and boil until just colored. Serve.
