1484. Orange Marmalade Cake



This is one of those cakes where you literally put all the ingredients in a bowl, stir, and bake. A wonderful thing about it is that it utilizes just over half a jar of orange marmalade jam, which for me was just perfect.You get a hint of bitterness from the peel, yet the sweetness is still enough to satisfy any sweet tooth. I added an extra element of mastic, totally optional, but totally advisable.



Ingredients

150g butter, soft
1/3 cup sugar
1 cup orange marmalade
3 eggs
1 1/2 cups flour
1 tsp mastica powder
1 1/2 tsp baking powder
1 pinch of salt


Method:

In a bowl and using a hand mixer, whisk all the ingredients until just combined. Be careful to not over beat as the crumb will come out dry.
Pour the batter in a prepared loaf tin and bake in a preheated 340F over for 30-35 minutes.
Allow to cool slightly before unmolding.
