1549. Feta Filo Pie


Essentially four ingredients, this feta filo pie can be made as part of any of the three meals a day, or even as the main attraction with a side of salad. Filo pastry, olive oil, feta cheese, and an egg is all it takes.
Even the layering is very rustic and uncalculated. The top is literally crumpled sheets of filo.



Ingredients:

650g feta cheese, crumbed
1 large egg
1 packet filo sheets
olive oil


Method:

Mix well the feta and the egg, set aside.
Using a 9-inch pie plate, layer the filo pastry in over-lapping and over-hanging form, brushing between each sheet with olive oil.
When you have a solid 5 to 6 lays down, pour in the cheese filling.
Fold the overhang over the filling to cover. Using extra filo pastry sheets brushed with olive oil, lightly scrunch them up and lay them over the surface of the pie.
Bake for 50-55 minutes in a preheated 350F oven.
Serve warm or at room temperature.
