1567. Cafeteria Omelette


Have you ever gone to a very basic cafeteria that does not even qualify as a restaurant because it is so basic with great food that is almost for free? Well, I have, and the omelette station is by far my favorite on lucky mornings giving me the luxury of a hot breakfast on a weekday. 
Steel tubs hold a variety of prepared vegetables to be mixed in the eggs: chopped tomato, sweet pepper, chilli pepper, onion, grated cheese are the usual suspects. I wouldn't mind adding mushroom as well. Two eggs are cracked in a bowl, vegetables of your choice are added straight into the eggs, seasoned, whisked, and poured in a small pan of shimmering oil. Toast and a dab of butter on the side, off you go to enjoy your cafeteria omelette.



Ingredients: serves one

2 eggs
1 Tbsp chopped tomato
1 Tbsp chopped onion
1 Tbsp chopped capsicum
some chopped chili pepper
1-2 Tbsp grated cheese
salt, pepper, oil



Method:

Heat a lightly oiled pan over medium heat.
Crack 2 eggs in a bowl. Whisk in the vegetables and seasoning.
Pour the egg mixture in your hot pan and allow to set well on the sides.
Carefully flip and cook for a few seconds longer.
Serve immediately with some buttered toast.
