1571. Everyday Salad


It is a fact of life that the more you advance in age, the more conscious you need to be of your food choices to maintain your health. Another tried-and-true fact is that those choices are made significantly easier when you are prepared. Building a routine helps to avoid sudden moments of hunger where bad choices are made out of convenience. This is a nutrient-dense salad I have on the daily, and I never get tired of it. 
Obviously, you can tailor your own salad, but I have tuned this down to perfectly suit my taste, making it a pleasant every day experience, versus a burden I must endure for my well-being. Make sure to dress the salad just before serving.



Ingredients: serves one

1 cup shredded kale
1/4 cup diced cooked beetroot
2 Tbsp diced red capsicum
2 Tbsp corn kernels
5 cherry tomatoes
2 tsp sunflower seeds
2 tsp pumpkin seeds

For the dressing:
1 Tbsp lemon juice
2 Tbsp olive oil
1/4 tsp salt





Method:

Combine the salad ingredients in a container to suit your needs (bowl, if dining at home, tupperware if on the go). Combine the dressing ingredients in a separate smaller container. Shake/whisk the dressing well before pouring over the salad.
Consume immediately after dressing.
