1605. Orange Glaze Shortbread Cookies


The cookies may not look like much, but they were unbelievably delicious. Melt-in-the mouth, literally, and you will find yourself making mug after mug of tea just to have some more cookies.
Like usual, this was a recipe picked by my cute baking date, and a commendable choice it was. The glaze is a poem all on its own. First, the baked cookies are brushed with warmed strained apricot jam, then drizzled with an orange juice icing. They go back in the oven to set the glaze, and then, enjoy.


Ingredients:

1 cup butter, soft
1/3 cup powdered sugar, sifted
1 orange, zest grated
1/2 tsp powder coriander
2 cups flour

For the glaze:
2 Tbsp apricot jam
3 Tbsp powdered sugar
1 Tbsp orange juice




Method:

In a bowl, beat butter and powder sugar until very light and creamy. Stir in the finely grated orange zest. In another bowl sift together the coriander powder and the flour. Work the flour mixture into the butter mixture to form a soft dough. If the dough is soft enough to pipe, go ahead and pipe rings of cookies. If not, then roll portions of the dough into rods and connect to make cookie rings. Refrigerate the cookies for 30 minutes. then bake in a preheated 350F oven for 20 minutes until very lightly browned on the edges.
To glaze, warm the apricot jam and strain it. Brush each cookie with the jam. In a small bowl, mix together the powder sugar and orange juice to form a thin glaze. Brush the cookies with this glaze. Return the cookies to the oven for 3-4 minutes until the glaze is set. Cool completely before serving.
