Danish pastry is know as those sweet fruit or custard derived pastries presented at every hotel buffet breakfast. Well, they may also come in savory form, and be enjoyed outside the realm that breakfast dictates.
These cherry tomato and feta cheese danishes have the filling partially pre-cooked on the stove before going in for a final bake altogether. Tomatoes and feta cheese shine together, and this form of combination is no exception.
Ingredients: makes 9
2 Tbsp olive oil
1 ½ cups cherry tomato, halved
1 spring onion, chopped
1 tsp dry mint
Salt and pepper
1 cup feta cheese
Puff pastry sheet
Method:
Cut the sheet of pastry into nine equal squares; set aside.
Saute the tomato in the olive oil until just starting to blister. Remove from heat and stir in the chopped spring onion, dry mint, salt, and pepper; set aside to cool.
Preheat oven to 400F.
Crumble the feta cheese over the base of the puff pastry squares. Top with a tablespoon of the cooled tomato mixture.
Bake in preheated oven for 15-18 minutes, broiling for about a minute to brown the top.
Let cool slightly before consuming.
