1635. One pot Fresh Tomato and Green Olive Pasta


This is a quick one-pot meal that can be considered wholesome if you pick the right kind of pasta. Only whole ingredients are going in, with the tomatoes and onion grated to make the healthiest sauce which the pasta is cooked in. 
The cheese is optional, and can either be stirred through the cooked pasta or topped and broiled until melted and charred in places.




Ingredients:

3 tomatoes, grated
1 onion, grated
2 cloves garlic, grated
50g butter
1 tsp oregano
salt and pepper
half packet (220g) pasta
cheese, optional



Method:

Put all the ingredients except for the cheese in a pot, add three cups of water and bring to a boil.
Simmer uncovered until the pasta is cooked and the sauce is to the desired thickness.
At this point, you can either stir the cheese through the pasta, or top with the cheese and broil to melt.
