1729. Breakfast Carrot Bake


Consisting of mainly carrots and eggs with some oats to bind them, this carrot bake is the ideal healthy replacement for toast. Loaded with so many nutrients, it tastes like pretty much nothing, so its all about flavoring with toppings and conscious swaps for a healthier start to the day. 
To make it even more interesting, everything is chucked in a blender, pureed to a batter, poured in a rimmed baking sheet and baked. I divide into six squares for six breakfasts over the week. Top with peanut butter and honey, like I did, or jam, or cream cheese, or anything you would ordinarily top toast with.



Ingredients:

5 carrots
6 eggs
1 tsp cinnamon powder
1 tsp baking powder
1/2 cup oats


Method:

Do not peel the carrots since many of the nutrients are in the skin. Do remove the top of the carrot, then slice up the rest and put with the rest of the ingredients in a blender. Blend to a batter.
Pour in a parchment lined 9 by 13 inch rimmed baking sheet, and bake for 20-25 minutes in a preheated 350F oven.
Cool completely, cut into six portions, and store covered in the refrigerator. Use as you would toast, and top with peanut butter and honey, like I did, or jam, or cream cheese, or anything to your taste.
