1735. Quick Cheese and Olives Sandwich Roll


This was a quick non-recipe recipe shared across social media during Ramadan as the perfect quick-fix suhour for late wakers. It takes no time to throw together, then it is dry-toasted in a pan for the ultimate crispy exterior and melty interior combination. 
A melty Syrian cheese is used, as apparently this is a Syrian sandwich. The braided cheese kind. However, I have also tried with with regular grated mozzarella which is available at all times in my refrigerator, and it was fantastic. I have also used saj bread, which was superb as well.


Ingredients: makes 2

1 large Labanese pita bread
1 cup grated mozzarella cheese
4 Tbsp sliced black olives
2 tsp shatta paste
1 tsp nigella seeds
2 dabs butter


Method:

Split the pita in half, just separating at the seam using your fingers to yield two fully round halves. On the inside of the breads, equally distribute in the middle of each bread the cheese, olives, shatta, and nigella seeds. Finish off with a spread of butter just beside the filling.
Roll up tightly and place in a hot pan, seam-side down, to toast. Keep a sharp eye so to not burn the bread, and turn at intervals to toast all around. Serve hot.
