1738. English Muffin Breakfast Sandwich


There used to be a time (still?) when Mc Donald's was the ultimate depiction of bad parenting. When they introduced their breakfast menu, this judgement was all the more accentuated. One thing though that we cannot deny is how addictive and palatable their food is. So when their Breakfast Mc Muffin took off blazing, many people tried to recreate it at home to control the wholesomeness of the ingredients and the inevitable inclusion of (rancid) oil used at the fast food chain. 
I have a wonderful recipe for English muffins on MCW here, and used it to great success once more. The sausage patty came from a supermarket packet of raw merguez sausages, casings removed and meat reshaped into a patty. The eggs were baked in the oven for two reasons: first, it's hands-off, giving you the opportunity to cook the sausage patties as the eggs are cooking, and secondly because it forms a perfect rectangle that can then be cut into perfect squares.




Ingredients:

6 English muffins
500g raw merguez sausages
6 eggs
6 slices processed cheese
salt, pepper, oil to cook




Method:

Split each muffin in half and lightly toast; butter the inside (optional but recommended) and set aside.
Whisk the eggs in a bowl and season with salt and pepper. Oil a 9 by 13 inch rimmed oven dish and pour in the eggs. Bake for 15 minutes in a preheated 350F oven.
Meanwhile, remove the sausages from the casings (discard casings) and form 6 patties. Sear the patties on both sides in a hot pan until browned and cooked through.
To assemble, cut the baked egg omelette into six squares and place a square on one side of each split muffin. Top with the hot seared sausage patty and a slice of cheese. Seal the sandwich and serve hot.
