1781. Omani Maho Halwa


Oman is very well known for its halawas, a pudding-like intensely fragrant dessert that a spoonful of is sufficient to satisfy your senses. Naturally, this sweet has adapted non-conventional variants to the classic, and this Maho is my new favorite. The secret to the texture and flavor is sweet condensed milk. The additional flavorings are the usual fabulous trio: rose water, saffron, and cardamom.



Ingredients

2 Tbsp sugar
100g butter
2 cans sweet condensed milk
2 cans cream 
pinch of salt
large pinch of saffron
1 tsp powder cardamom
1/4 cup rose water
nuts for decoration


Method:

Add the saffron and powdered cardamom to the rosewater and set aside.
Melt the sugar in a dry pan and then add butter.
When butter is melted, add sweet condensed milk, cream, and a pinch of salt.
Keep stirring over medium heat until starts to thicken and does not stick to the sides of the pot.
Stir in the rosewater mixture and optionally a drop of red food coloring. Stir until thickened again.
Pour in serving dish while still warm and decorate with nuts, saffron threads, and Damask rose buds.
Serve cooled, with Arabic coffee.
