1785. Gochujang Shrimp Noodles



This is a quick meal that checks every box of convenience, nutrients, and flavor. You can use any noodles you like, I'd just avoid pasta. Gochujang is the Korean chili paste that the made the rounds everywhere over the last few years. Increase or decrease the amount depending on how spicy you want your food. 
The addition of shrimp elevates these noodles form side dish to main dish status.


Ingredients:

600g raw peeled shrimp
2 Tbsp sesame oil
200g noodles
3 Tbsp gochujang
2 Tbsp soy sauce
2 Tbsp vinegar
1 ½ Tbsp brown sugar 
melty cheese


Method:

Saute the shrimp in the sesame oil until seared.
Add the gochujang, soy sauce, vinegar, and brown sugar; saute a minute more.
Add three cups of water and the noodles. Bring to a boil until the noodles are cooked. Add more water if you want your dish saucy.
Add the cheese on top and cover the pot for two or three minutes over reduced heat to allow the cheese to melt. Sprinkle some extra sesame (optional) and serve immediately.
