1813. Quick Feta Filo Parcel


I'm all about quick and easy recipes of late. A long list of ingredients or a complicated method have me go a 180 degree heel-spin. So when I saw this non-recipe recipe in both savory (feta cheese) and sweet (walnut cinnamon, coming soon) versions, I was immediately on board. 
They did not disappoint. The salty feta is paired with fresh thyme (really worth getting it fresh), then drizzled with runny honey after it is cooked. This strange combination is delicious.


Ingredients:

1 packet filo sheets
400g feta cheese, crumbled
fresh thyme leaves
plenty of olive oil
runny honey, to serve


Method:

Brush a sheet of filo pastry with olive oil, then place another sheet on top perpendicular to the bottom (so the shape will resemble a +). Brush with more oil then sprinkle about two tablespoons of crumbled feta in the center and add a few fresh thyme leaves. Fold the corners over to the middle until you have a square parcel. Brush with more oil on the exterior. Repeat until the remaining ingredients are used up.
Grill the feta parcels in a medium-hot pan on both sides until golden brown. Transfer to the serving dish and drizzle liberally with runny honey and extra fresh thyme leaves.
