I'm the kind who heel-pivots 180 degrees at the mention of trendy diet food, but sometimes I am intrigued. This recipe for raw date cinnamon rolls is apparently sold in an expensive New York cafe and was supposed to taste exactly like a glazed cinnamon roll. Psyllium husk could be considered the only "exotic" ingredient here, but honestly it's not all that exotic. Verdict? I need to process the nuts to a finer powder, but shockingly yes, they do taste like a glazed cinnamon roll!
Ingredients:
Crust:
120g oat flour (1 cup)
100g pecans (1 cup)
2 Tbsp + 2 tsp psyllium husk + 1/3 cup water
1/4 cup maple syrup
Filling:
155g dates (1 cup)
3 tbsp maple syrup
2 tbsp water
Salt (to taste)
1 tsp cinnamon
Method:
Soak psyllium in water.
Blend pecan nuts
Add all other crust ingredients
Blend until dough forms
Push out into a rectangle on parchment paper. (long side should be 25-27cm), and the thickness should be about 0.5 cm
Blend all the filling ingredients
Spread a thick layer of the filling on the crust, but keep 1-2 cm at the top as is.
Roll with the help of parchment paper and hands
Refrigerate overnight.
Cut into rolls.
