
There was an Iraqi cultural fair not long also and it was there that I tasted my first qalya. It is a very basic, very delicious dish hailing from Mosul, in northern Iraq. The main ingredients are lamb fat, boneless lamb chunks, onion, and a dash of date molasses.The only seasoning is salt and pepper, but I added a spoonful of dried lemon powder as I figured all the lamb fat needed some zing to cut through it. It was a delicious meal.
Ingredients:
200g lamb fat
1kg boneless lamb meat chunks
500g small whole peeled onion
1 tsp loomi powder
1 tsp black pepper powder
1.5 tsp salt
2 Tbsp date molasses
Method:
Render the fat then increase heat to high and sear the meat on both sides. Add the loomi, pepper, salt, and date molasses; stir. Add the whole peeled small onion and enough water to just cover everything. Bring to a simmer, reduce heat to low, cover and cook for 1 hour until meat is tender. Serve with ambar Iraqi rice if you're lucky to have access, otherwise jasmin or basmati rice are also nice.
