FMF is the acronym for freshly milled flour. Because of the processing conventional white flour goes through, I cannot in clear conscience claim that FMF recipes will work in exactly the same way with mass produced flour.
It is very gratifying to have milled the flour and consumed these muffins all within 30 minutes, but honestly It might work just as well with regular (bleached, stripped of nutrients, and chemically fortified) flour.
Ingredients:
1 cup plain Greek yogurt
½ cup milk
100g melted butter
2 eggs
2 tsp vanilla
300g freshly milled flour
½ cup sugar
1 tsp baking soda
Pinch salt
Method:
In a bowl, mix the yogurt, milk, melted butter, eggs, and vanilla.
In another bowl, mix the flour, sugar, baking soda, and salt.
Pour the dry into the wet and mix until just combined. Using a teaspoon, pour the batter into greased mini muffin molds and bake for 9 minutes at 400F preheated oven.
