2024. Roast Whole Seabass


Getting Bilbo to make you this roast whole seabass for dinner might be a bit difficult, but making it yourself is so, so easy. There is also something satisfying about this dish that eradicates the concept of being dauted by cooking seafood.


Ingredients:

1 whole seabass, cleaned and gutted
1/2 lemon, sliced
2 garlic cloves
dill sprigs
salt and pepper
olive oil



Method:

Ensure your sea bass is scaled, gutted, and rinsed. Pat it completely dry with a paper towel. Make 3 to 4 diagonal cuts on both sides of the fish, cutting right down to the bone. This helps the fish cook evenly and allows the flavors to penetrate the meat. Rub the whole fish generously with extra-virgin olive oil, sea salt, and black pepper. Stuff the belly cavity and the scored slits with thin lemon slices, garlic cloves, and fresh herbs. Preheat your oven to 200°C (400°F). Place the sea bass on a greased baking tray or a roasting pan. For an extra savory meal, lay down a bed of thinly sliced potatoes, fennel, and cherry tomatoes in the tin before placing the fish on top. Bake uncovered for 20 to 25 minutes, or until the internal temperature reaches 60°C (140°F) in the thickest part. If you want the skin crispier, pop it under the broiler for the last 3–5 minutes.
