176. White Pizza and Spinach



A fluffy-crisp crust topped with an easy, creamy blend of cheese, and garnished with green spinach, makes a delicious and pretty pizza. I found this recipe on King Arthur Flour, and decided to make my own ricotta for it.
I also sauteed the spinach in some of that garlic oil, which heightens the flavors so much, I just keep a cup of it in the refrigerator at all times. With planning, this recipe is as easy as: dough, cheese, spinach, season, bake!




Ingredients:

For the crust:
1 1/4 cups flour
1 Tbsp dry milk
1 tsp salt
2 tsp sugar
1/4 cup warm water
2 Tbsp olive oil
1/4 Tbsp plain yogurt
1 1/2 tsp yeast


For the topping:
1 1/2 cups ricotta cheese
1 1/2 cups shredded mozzarella cheese

2 Tbsp olive oil or garlic oil
1 pk frozen spinach
salt & pepper



Method:

To make the crust:
Mix all of the ingredients to make a soft, supple dough.
Knead for 5 minutes, put the dough in a lightly greased bowl, and cover with plastic.
Allow the dough to rest for 30 to 45 minutes

Preheat the oven to 425°F.
Grease a pizza pan with olive oil or use a non-stick baking sheet.
Pat the dough into the pans.
Let the dough rise, covered, while you prepare the topping.

To make the topping: Mix the ricotta, and shredded cheese until well combined. Set it aside.

Heat 2 tablespoons of the (garlic) oil in a large skillet set over high heat.
Add the spinach and sprinkle on the salt. 
Saute for 5 minutes then transfer it from the pan to a strainer, to drain.

Spread the ricotta topping evenly over the crusts, about 1/4" thick.
Dollop the spinach evenly around the pizza surface. 
Bake until the the crust is crisp and the cheese is a bit browned, about 15 minutes.

Serve warm.
