141. Garlic-Infused Oil


This wonderful garlic-infused oil is a delight to use in a wide variety of ways in the kitchen. From cooking with it, marinating meat or chicken in it, using it in a dressing, drizzling it over steamed vegetables, or simply dunking warm bread in it.

It uses two staples, garlic and olive oil, which are combined correctly, and calls for storage for a week in the refrigerator.
The step of cooking the garlic in the oil is very important because leaving raw garlic in oil for days or weeks will put you at risk for Closridium botulinum poisoning, which is very serious and potentially life-threatening.



Ingredients:

1 head garlic
1 cup olive oil



Whole garlic cloves.
Smashed garlic cloves.


Method:

Smash and peel cloves of garlic.
Transfer to a medium pot, add olive oil, and heat over medium-low until bubbles form around garlic, 3 minutes.
Let cook 10 minutes, reducing heat to low if garlic begins to brown.
Remove from heat and let cool to room temperature, 45 minutes.
Use as you like in cooking.
