951. Lentil Felafels
Technically, calling these lentil fritters felafel is a misnomer. It is equivalent to calling a roast carrot dip carrot hummus. Hummus is the famous chickpea-tahini dip we all know and love. Felafel is the chickpea/broadbean fritter we all know and love. It is not a description; it is it.

935. Iraqi Mung Bean Rice
Mung beans are known as Mash in Iraq. Since the Iraqis are very fond of their timman, this Iraqi mung bean rice is quite simply Timman Mash (تمن ماش). It is one of the simpler vegetarian rice dishes, but most certainly can be spruced up with some meat, chicken, or even fish.

927. Adeni Jabeez Flatbread
What a journey around the Arabian States! It was almost two (two!) years ago when we got together and published the first #MENACookingClub post of the grand rounds: A for Algeria ; and here we are at Y for Yemen.

912. Felafel Torte
The traditional felafel is a round-ish fried small patty that is delightfully crunchy on the outside and so moist on the inside. I eventually adapted it to a baked loaf version, sliced and stuffed into slider buns.

907. Iraqi Fava Dip
Similar in concept to the classic hummus, fresh fava or broad beans lend a unique flavor Iraqis love very much (especially in rice).

903. Palestinian Rommaniya
Straight off, I'll be honest: I had great expectations from this recipe and was just as greatly disappointed. Rommaniya (الرمانية الفلسطينية) is an ancient Palestinian recipe merging a lot of my favorite ingredients: lentils, aubergines, lemon, garlic, pomegranate molasses, and fresh pomegranate.

888. Iraqi White Bean Salad
The use of pulses in salads is not a new concept, and is one especially popular in Middle Eastern cuisine.
Some bean/pulses salads here on MCW are chickpea, black eyed peas, and lentils.

876. Iraqi Aashouriya
Aashouriya (عاشورية) is a dish many Muslim cultures have versions of, and it is made for the occasion of Ashoura (عاشوراء). The foundation is always the same: dried grains and dried pulses cooked to a sort of sweet pudding which may or may nor include dried fruits as well.

857. Chickpea Fetta
I mentioned in my chicken fetta post how versatile the fetta is and how you can create your own based on what ingredients you have on hand. Some have rice, some have bread, some have both. Some have become classics because of how popular, easy, and readily available the ingredients are. This chickpea fetta (فتة الحمص) is one of those classics.

842. Long Life Salad
Four different kinds of pulses, a gluten-free grain, a hearty green, nuts, dried fruit, fresh fruit, healthy oils, and a hefty punch of fresh citrus is this salad. A fairly long list of ingredients and some prep work is needed, but the pay off if a fantastic one.

836. Lentil Aubergine Salad
This salad looks so mild and timid, and maybe even a little boring, but my was it an explosion! Brown lentils, fried aubergine, and crispy fried (or toasted) pita bread are layered with tangy rich pomegranate molasses and topped with a yogurt dressing.

835. Crispy Chickpea Avocado Salad
This salad is a nutritional powerhouse. A few simple ingredients that one would not otherwise think of bringing together make for a healthy and satiating salad.

607. Chickpea Vegan Curry
This vegan Indian curry is so delicious it's hard to believe it's so healthy!
In it shine seven different vegetables, which is more variety than what I usually eat in the span of a day, much less a single meal.

594. Iraqi boiled Fresh Beans
This nibble-on is as simple as can be.
I took advantage that we got some fresh broad beans, but it can also be done with dried broad beans.

I do not claim this salad to be authentically Mexican, as it is invented by me and I am not Mexican.
