For the Steak:
1 ribeye steak
1 tsp flakey salt
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp black pepper
Olive oil
Butter + garlic, for basting
For the Alfredo:
7 cloves garlic, minced
30g butter
300ml heavy whipping cream
1 cup freshly grated Parmesan
Salt + black pepper, to taste
300g rigatoni pasta
Method:
Season steak evenly with salt, paprika, garlic powder, onion powder and black pepper.
Heat olive oil in a large skillet over high heat. Sear the steaks until deeply browned, then add butter and garlic and baste until cooked to your liking. Remove and let rest.
Keep all those steak drippings in the pan. Add the minced garlic and butter and cook until fragrant.
Add the heavy cream and simmer, stirring occasionally, until slightly reduced and creamy. Season with salt and pepper.
Stir in the Parmesan until melted and smooth.
Cook rigatoni separately in salted water until al dente. Drain and toss with the Alfredo sauce.
Slice the steak and serve over the pasta. Finish with fresh minced parsley and plenty of Parmesan.
