1836. Purslane Burghul

I posted a Palestinian purslane dish not too long ago, and this Syrian version with burghul used up the last of my frozen summer bounty.

1824. Freekeh Casserole

Freekeh is an ancient Mesopotamian grain that has made it to our modern-day superfood lists. It is simply a wheat grain, but the following makes all the difference: it is harvested while still green, and it is smoked.

1538. Tomato Burghul

Rice is the staple grain on most dining tables in the world, but some other grains are sadly overlooked and deserve some love as well. Coarse burghul has a nutty quality to it which is rather wholesome. I have previously featured it cooked with mushroom and a side of farmer's salad; a peasant meal that is fit for kings.

902. Buttersquash Grain Salad

This is the ideal cold-season salad for many reasons. It is hearty, it keeps excellently for a week refrigerated, and it gives good sustenance to energy. Moreover, it tastes great.

891. Pumpkin Seed Granola

I love my trusty granola recipe and have made it countless times. This is the simplified and stripped-down version which also lends itself to endless varieties. The star of the show are the pumpkin seeds, but there are also flax seeds in there and feel free to add/substitute for sesame and sunflower seeds as well.

875. North African Aubergines and Couscous

While this vegetarian dish is not necessarily be authentically North African, the flavor combinations in it most certainly are. Preserved limes, briny olives, sweet sultanas, fresh coriander and mint, cooling yogurt, earthy cumin, nuttiness and the indisputable couscous among others.

775. Turkish Couscous Salad

Admittedly, this blog already boasts a couscous salad or two (or three).
However, this Turkish couscous salad is well worth another addition.

772. Spiced Fish with Wheatberry Salad

If you need a recipe to prove that cooking with fish does not need to be complicated, this is the one. It is spicy, exotic, and nutritious all at the same time. A wheatberry salad accompanies this spiced and pan-fried white fish fillets. Oddly enough, the salad in this case requires more time and prep than the fish itself.

752. Carrot-Nut Overnight Oats

Last in the series of five overnight oats comes the vivacious carrot-nut overnight oats. The raspberry-chocolate was decadent, blueberry-lemon refreshing, banana-peanut rich, ananas-coconut tropical, and this one is colorful and vivacious.

751. Ananas-Coconut Overnight Oats

Fourth in the series of five comes the tropical combination of ananas-coconut overnight oats. The raspberry-chocolate was decadent, blueberry-lemon refreshing, banana-peanut rich, this one tropical, and the colorful carrot-walnut.

750. Banana-Peanut Overnight Oats

Third in the series of five comes the classic combination of banana-peanut overnight oats. The raspberry-chocolate was decadent, blueberry-lemon refreshing, this one is rich and nostalgic, tropical ananas-coconut, and the colorful carrot-walnut.

749. Blueberry-Lemon Overnight Oats

After the raspberry-chocolate overnight oats comes the blueberry-lemon version. Over the basic recipe of oats, chia seeds, milk, and yogurt, a little blueberry jam, fresh blueberries, and lemon zest is added. Other versions: rich and nostalgic banana-peanut, tropical ananas-coconut, and the colorful carrot-walnut.

748. Raspberry-Chocolate Overnight Oats

January is incomplete without a healthy dose of oats. For me, I prefer my oats in the morning, but done right, they are great for on-the-go as well (like these muesli bars). I have posted an overnight muesli before, which is great for brunch, but this recipe (and four more coming up) is perfect for single serving. Other versions: refreshing blueberry-lemon, rich and nostalgic banana-peanut, tropical ananas-coconut, and the colorful carrot-walnut.

I was surprised when I discovered that freekeh is not to everyone's tastes.

539. Freekeh and Nuts

Having explored the ancient Babylonian freekeh grain in the form of two different salads and a meaty pilaf, I wanted to make a meatless savory side rich in flavor as well as texture.

506. Freekeh Dill Pepita Salad

I invented this salad because I felt like I needed a loaded, health-boosting, feel-good salad.

504. Granola Cookies

Outrageous seems to be the norm these days. Some ideas are totally unthinkable, while others are intriguing.

442. Pistachio Mint Couscous Salad

This bejeweled salad is a variant inspired by Couscous, Pomegranate and Pine Nut Salad I made a while back. It is still a highly efficient salad, taking ten minutes or less to toss together, just with different flavors and a tad more ingredients.
