Last in the series of five overnight oats comes the vivacious carrot-nut overnight oats. The raspberry-chocolate was decadent, blueberry-lemon refreshing, banana-peanut rich, ananas-coconut tropical, and this one is colorful and vivacious.
Once again, the substitutions are endless. Instead of honey use maple syrup/molasses/agave. Use any milk you like (dairy/soy/nut), and any nut you prefer (walnut/pecan/pistachio).
It's great assembling jars of these overnight oats in a few short minutes and having them all ready without fuss or preparation in the morning.
Ingredients:
1/3 cup oats
1 Tbsp chia seeds
1/4 cup plain yogurt
1/4 cup milk
1 Tbsp honey
1/4 tsp cinnamon
1/4 cup shredded carrot
2 Tbsp pecan or walnut, chopped
Method:
In a jar, put the oats then the chia seeds.
Pour over the milk (could be dairy or soy or nut milk of choice), and spoon over the plain yogurt.
Add the honey and cinnamon.
Add the grated carrots and finish off with the chopped nuts.
Refrigerate overnight and consume next morning.
This could be heated in the microwave if desired, but make sure your jar is microwave safe.
