After the raspberry-chocolate overnight oats comes the blueberry-lemon version. Over the basic recipe of oats, chia seeds, milk, and yogurt, a little blueberry jam, fresh blueberries, and lemon zest is added. Other versions: rich and nostalgic banana-peanut, tropical ananas-coconut, and the colorful carrot-walnut.
By all means do not forgo the lemon zest, as this tiny ingredient really complements and entire dish and brings it together. A real delight to wake up to in the morning. It keeps me forgetting food for a good six hours and is perfect for early mornings and on the go.
1/3 cup oats
1 Tbsp chia seeds
1/4 cup plain yogurt
1/4 cup milk
1 Tbsp blueberry jam
1/4 tsp vanilla
1/4 cup blueberry
1/2 tsp lemon rind
In a jar, put the oats then the chia seeds.
Pour over the milk (could be dairy or soy or nut milk of choice), and spoon over the plain yogurt.
Add the jam and vanilla.
Add the blueberries and finish off with the lemon zest.
Refrigerate overnight and consume next morning.
This could be heated in the microwave if desired, but make sure your jar is microwave safe.
