Fourth in the series of five comes the tropical combination of ananas-coconut overnight oats. The raspberry-chocolate was decadent, blueberry-lemon refreshing, banana-peanut rich, this one tropical, and the colorful carrot-walnut.
If you have no ripe and fresh ananas (pineapple) on hand, by all means you can use canned ananas. Research has proved that many foods multiply in nutritional value when soaked for a while. This particular recipe accomplishes the soaking of three different ingredients: oats, chia, and almonds.
Ingredients:
1/3 cup oats
1 Tbsp chia seeds
1/4 cup plain yogurt
1/4 cup milk
1 Tbsp honey
1 Tbsp almonds, slivered
1/4 cup ananas (pineapple), diced
1 tsp coconut, shredded
Method:
In a jar, put the oats then the chia seeds.
Pour over the milk (could be dairy or soy or nut milk of choice), and spoon over the plain yogurt.
Add the honey and almonds.
Add the ananas and finish off with the shredded coconut.
Refrigerate overnight and consume next morning.
This could be heated in the microwave if desired, but make sure your jar is microwave safe.
