I have a soft spot for all things zaatar, provided that it is a quality mix that doesn't taste like sand. Fresh zaatar is a favorite every time without exception. These zaatar and cheese buns are leavened with sourdough starter, and were a pleasure with a steaming sup of tea.

1727. Zaatar and Cheese French Toast


French toast is seriously over-glorified. All it is, is a simple technique of soaking stale bread in an egg and milk mixture then frying in a pan. It is then usually flavored with cinnamon sugar. This zaatar and cheese version is my absolute favorite play on French toast, by far.

These fresh zaatar kaaks might not look like much, but my zaatar plants cannot grow fast enough to accommodate the increased demand generated by them. So jam-packed with goodness, you will quickly forgive the whole cup and a half of olive oil in the recipe list. After all, what's a Palestinian recipe without a tub of olive oil?

905. Iraqi Nut Lebna Log


Of late, this herby, nutty lebna log has been my go-to breakfast. Requiring no cooking, and minimal prep time, it is a major health kick for the body to boot. The basic strained yogurt recipe we used to also make lebna balls is rolled into a log, smothered in some roasted nuts and zaatar, then flanked by a side of briny olives and fresh parsley.
