1949. Psyllum Husk Zaatar Fateer



Apparently, this is a diabetic friendly version of a classic zaatar fateer. It does not spike glucose, nor cause bloating or inflammation as it does not employ conventional flour. Taste wise, I'd rather have the carb-laden version any day of the week, but it is good to have alternate options, and there might be a reader out there who benefits from me sharing the recipe.


Ingredients:

4 eggs
4 Tbsp greek yogurt
2 tsp psyllum husk
salt and pepper
grated cheese
zaatar




Method:

Preheat oven to 350F and lightly oil a tarte tin.
In a bowl, whisk together the eggs, yogurt, psyllum husk, and salt and pepper.
Pour into the oiled tin and top with grated cheese and zaatar.
Bake for 30 minutes until set and starting to brown.
Serve hot or room temperature.
