I cannot pass up a quiche. This one I made more out of convenience as it gave me about six days of a readymade breakfast. The picture in the loaf pan is half the recipe; use a larger round dish if making the full quantity below.
Ingredients:
12 eggs
125g cream cheese
120g butter, melted
250g cheddar cheese, shredded
salt and pepper
Method:
Preheat oven to 325F. Butter your baking dish and sprinkle about half of the shredded cheddar.
In a blender, blend the eggs, cream cheese, salt, and pepper. As the machine is working, pour in the cooled melted butter.
Pour the egg mixture in the prepared baking dish and sprinkle the top with the remaining cheddar.
Bake in the preheated oven for about 45 minutes until the outside is set and the middle is just barely jiggly. Set to rest for 10 minutes before slicing.
