Back to basics always has a healing effect on my mind, body, and soul. This Syrian chicken onion stew may not look like much, but for me it holds barakah. It is one of those recipes who is made exactly as its name: it is chicken and onion that is stewed. The flavor is delicious, the content is filling, and it takes very little in time, effort, and resources to get a wholesome meal on the table, warming both bellies and hearts.
Ingredients:
1kg skin-on, bone-in chicken
3 large onions, sliced
salt and pepper
bay leaves
Method:
In a large (5 litre capacity) pot, cover the chicken pieces in water, add the sliced onion and bay leaves and let it come up to a boil. Skim off any foam that forms on top, then let it boil covered for 1 hour then add salt and pepper to taste. Allow to boil a further 20 minutes uncovered. Serve over white or vermicelli rice with yogurt on the side.
