Many times, simple is best. Chicken broth is a healing and nutrient-dense food that is flavorsome and generally included for overall health. Now if one were to be inflicted with the flu, its healing properties shine.
I consider this an Iraqi soup because it's what I had as a child. All it is, is bone-in, skin-on chicken boiled for about 2 hours, then some rice and parsley and salt are added. Absolutely delicious and is like a hug in a bowl.
Ingredients:
1 whole chicken, cut up
bay leaves
1 cup rice
1 cup chopped parsley
salt
Method:
In a large pot (5 liter capacity), cover the chicken with water, add a bay leaf or two, and bring to a boil. Skin the surface then lower temperature to a simmer and continue to cook for about 2 hours.
During this time, rinse the rice and soak in water.
Pour the broth through a strainer into another pot and discard the bay leaves.
When the chicken is cool enough to handle, remove the skin and bones, and feed them to the stray cats outside. Shred the remaining meat and set aside.
Return the broth and bring to a simmer. Before your drain the rice, rub it between thumb and balm to break up the grains. Then pour through a strainer and add to the broth. Stir non-stop for 10 minutes then allow to simmer another 10 minutes until the rice is cooked. Stir the shredded meat back inside, season with salt, and stir in the chopped parsley. Serve hot.
