1944. Home Doner Kebab

The photo does not do the dish justice. This hacked doner kebab is a rare "viral trend" that I can attest is most certainly worth the hype. While most served it in a sandwich, I served it over home-fried potato fries, topped with a garlic sauce, ketchup, and pickled. It is so moreish that you will continue to eat well beyond feeling full.



Ingredients: serves 4

500g beef mince
1 large onion, grated
1 Tbsp sweet paprika
1 tsp red pepper flakes
1 tsp salt
1 tsp black pepper
1 Tbsp dried oregano
3 Tbsp olive oil
1 heaped Tbsp greek yogurt

For the garlic sauce:
1/4 cup garlic cloves, peeled
1 tsp salt
1/4 cup fresh lemon juice
1 cup oil

To serve:
french fries
mozzarella cheese
ketchup
shatta
pickles



Method:

Combine doner ingredients very well until it forms a paste like consistency.
Divide mixture into 4. Roll out each portion between two pieces of baking paper until very thin. Remove the top baking paper, then roll into a log. Repeat with the remaining three portions.
Place in a baking tray and bake at 400F preheated oven for 20min. Carefully unravel the baking paper, tear the meat into pieces and mix through its juices. Return to the over for 5-10 more minutes to crisp the shreds up.
To make the garlic sauce, using a hand blender, blend to a paste the garlic, lemon , and salt. Leaving the blender in the beaker, pour the oil then put the blender back on and slowly work your way from bottom to the top. This ensures the sauce gets emulsified and thick and is not just a loose liquid.
To serve, spread the hot fries on a serving platter, top with the hot doner shreds and mozzarella cheese. Add the garlic sauce, ketchup, shatta, and pickles. Serve right away.
