1943. Tea Time Filo Cheese Rolls


A warm freshly baked batch of these filo cheese rolls with a side of fresh tomatoes and cucumbers, paired with endless flowing cups of mint tea is one of life's pleasures. 

The process is simple, and very Turkish style, the rolls are dunked in a milk and egg mixture before baking.


Ingredients:

500g block feta cheese
250g shredded mozzarella
1 cup chopped parsley
2 large eggs
1 cup milk
1/4 cup olive oil
salt and pepper
500g filo pastry
sesame seeds



Method:

In a bowl, mash together the feta, mozzarella, and chopped parsley until combined and homogenous.
In another shallow bowl, mix together the eggs, milk, olive oil, salt, and pepper.
Cut the filo pastry in half width-wise, ending up in two piles of about A4 sized sheets.
Working with two sheets at a time, add some filling to one of the short sides of the rectangle. Fold up the sides and roll it up. Dunk generously in the milk mixture and place on a lined baking sheet. Sprinkle with sesame seeds.
Bake in a preheated 390F oven for about 15 minutes, then broiling for about a minute to get a golden toasted color.
Serve warm or room temperature with a side of tomatoes, cucumbers, and copious cups of mint tea.
