FMF is freshly milled flour, and if you're curious as to the reason why people opt for FMF, do google the benefits. Aside from that, there is some adjustment with FMF that does not allow for direct application of a recipe using conventional store bought flour.
This FMF pizza dough recipe is a keeper and while I do hope it is beneficial for MCW's readers, I find myself documenting it here more so for me to refer to time and again.Ingredients: for 4 pizza bases
525g fresh milled hard white wheat flour
450g warm water
3 tsp instant yeast
3 tsp sugar
3 Tbsp olive oil
2 tsp salt
Method:
Firstly, mill the flour. Then, in a stand mixer, add warmed water, salt, sugar, olive oil, and flour. Mix until all incorporated.
Cover, and let sit for at least 15 minutes to allow the fresh milled flour to absorb the water.
Then, add the yeast, and mix to incorporate.
Once incorporated, start the kneading process. (This can take 20 or 25 minutes.)
Knead until the dough reaches the window pane test.
Cover the dough and let rise for 1 hour or until doubled.
Preheat oven to maximum (480F-500F). Divide the dough into 4 equal pieces.
Flatten out each dough section until it is the desired size, add sauce & toppings and transfer to preheated oven.
Bake until cheese is browned & bubbly.
Remove the pizza and allow to cool for a few minutes before cutting.
