This is a traditional Palestinian savoury zaatar cookie, falling under the generic term "kaak". If you are lucky to have easy access to fresh zaatar, go ahead and use it here. Otherwise, the dried zaatar mix works just as well.
Cheese is also crumbled and incorporated; usually haloomi or akawi or naplusi. Depending on the manufacturer, you might need to partially desalinate the cheese before use. Makes a hefty batch great for freezing and including in packed lunches.
Ingredients:
2.5 cups flour
1 cup fine semolina
1 cup olive oil
2 Tbsp sesame, roasted
2 cups zaatar mix
1 tsp b. powder
1 cup crumbled cheese (haloomi)
½ cup water
Method:
Knead all the ingredients together, adding a bit more water if necessary.
Shape into rings, bake in preheated 360F oven for 12-15 minutes, broiling for about a minute at the end.
Cool completely before storing or freezing.
