This is your weekend breakfast, sorted. The clay pot in this equation is actually optional, but it is an indicator as to the simple origins of this egg dish. A simple saute of tomato, green pepper, and onion is fried up. Eggs are cracked in and scrambled. The lot is then topped with glass jar spread cheese.
Serve it alongside some bread, some steamy mint tea, and the weekend has officially started. You can make then whole thing in a clay pot, or just use a pan. The recipe is perfectly easy to make for one as it is for a dozen.
Ingredients: Serves 1-2
2 tsp ghee
2 Tbsp fine chopped onion
2 Tbsp fine chopped green pepper
1 tomato, finely chop
salt & pepper
3 large eggs
1 Tbsp creamy cheese (glass jar)
Method:
Saute the onion, green pepper, and tomato in the hot ghee until soft.
Crack in the eggs, season, and scramble, being careful to not overcook.
Upon serving, spread a tablespoon of glass jar creamy cheese over the still-hot eggs.
Serve immediately with bread of choice.
