1249. Ghazleeya (Arab Cotton Candy Dessert)


This was another instant hit which I know will be made over and over. Arab cotton candy differs in texture from the carnival cotton candy we all know and hate/love. The strands are somewhat thicker, overall texture slightly more dense, and it has an elasticity unique to it. But all this is literally just the topping. Under this highly attractive surface lays a delicious Arabian-flavored milk pudding that marries so well with the topping you'd think it was created for the sole purpose of being together.
The only thing that makes all this even better is just how easy it is to make. If you get your hand on Arabian cotton candy, this should be the first thing you make with it. Two important notes: the milk pudding must never be left untended over heat and requires constant stirring; the toppings are to be put minutes before serving as with time the cotton candy will dissolve into the pudding.


Ingredients:

For the pudding:
6 cups milk
2 cups cream
2/3 cup powder milk
8 Tbsp sugar
8 Tbsp cornflour
1 heaped tsp mastic paste
1 tsp orange blossom water
1 tsp rosewater

For the topping:
150g Arab cotton candy
1/2 cup slivered pistachio
1/4 cup ground lotus biscuit
dry edible rose petals



Method:

Make the pudding: Whisk in a pot, off-heat, the milk, cream, powdered milk, sugar, and cornflour until fully dissolved.
Put the pot over medium high, stirring all the while, until it starts to steam and threaten to boil. Reduce heat to medium or medium-low, stirring all the while, until the mixture is thicken to the texture of custard.
Off-heat, stir in the orange blossom, rose water, and mastic paste until dissolved.
Pour immediately into your serving dish, which should be a large bowl of medium depth and large surface area. Place cling film directly over the pudding to avoid a skin from forming.
Refrigerate 5 hours or overnight.
When it is full cooled, and just before serving, lay on the toppings. Start with the cotton candy, followed by pistachio, ground lotus biscuits, and ending with the dry edible rose petals.
