This is a pretty and simple dessert that can find a place on the family dining table or the guest one just as easily. I tend to prefer "from scratch" recipes, but once in a while, taking a delicious shortcut is non-objectionable. In this case: biscuits, sweet condensed milk, and jell-o.
All the rest is basically assembly. A resting time in the refrigerator is warranted to set the gelatine, and be sure to serve completely chilled.
Ingredients:
1 (85g) packet jelly crystals
250g plain sweet biscuits
175 g melted butter
¼ cup boiling water
3 level tsp gelatine
400g tin condensed milk
Juice of two lemons
Method:
Line a 16 X 22cm rectangular slice tin with baking paper and set aside.
Make jelly according to the packet instructions and set aside on the bench to cool - do not place it in the fridge as you don't want it to set just yet!
Crush the biscuits in a food processor and place into a separate bowl.
Add the melted butter and mix until well combined.
Firmly press the mixture into the bottom of the prepared tin and then place it into the fridge.
Pour boiling water into a small bowl, sprinkle the gelatine over the top and stir until completely dissolved.
Place the condensed milk and lemon juice into a separate bowl. Add the dissolved gelatine mixture and mix until completely combined.
Pour the mixture over the prepared base and place into the fridge until set.
Gently pour the cooled jelly over the top of the slice and place into the fridge until set.
Cut into slices and serve fully chilled.
