1299. Fresh Zaatar Haloomi Bread


Doubling as an afternoon bite or a hearty breakfast, this is a must-make recipe that freezes really well for when you are lucky to come across a batch of fresh zaatar. Another added bonus to this recipe is that you literally but all the ingredients together in a bowl and knead.
Fresh zaatar is magnificent if available, but using the dried zaatar mix instead might be a more available option. I would use 1 cup of the mix to replace the 3 cups fresh.


Ingredients:

3 cups flour (mix whole/white)
2 cups cubed haloomi
3 cups fresh zaatar (thyme), chopped
1 cup olives, sliced
1/2 cup milk powder
1/2 cup olive oil
1 egg
1 Tbsp vinegar
1 Tbsp yeast
1 tsp sugar
1 tsp salt
1 cup warm water



Method:

Knead all the ingredients together until a dough is formed.
Oil your rimmed baking pan with additional olive oil and press the dough inside. Let rest for 20-30 minutes while the oven preheats to 360F.
Bake in the preheated oven until the edges and corners start to color. Time will depend on the side of your baking pan. The thicker the bread the more time it will need. Broil a minute or so if necessary.
Remove the baked bread from the oven and brush with extra olive oil. Allow to cool before slicing.
Can be served at room temperature or re-heated. Stores very well frozen.
