1197. Zaatar Crisps


Ever since I discovered I can easily and quickly whip up my own batch of puff pastry, options have been seemingly endless in both the sweet and savory departments. These zaatar crisps were altogether unavoidable, seeing our love for tangy Palestinian zaatar.
Great for breakfast or just with a cup of tea, you will certainly find it challenging to stop at just one. Of course, store bought pastry is just fine.


Ingredients:

puff pastry
zaatar
olive oil


Method:

Divide the pastry in half.
Roll each half into a large rectangle about a quarter of a centimeter thick.
Brush off any extra flour off the surface.
Starting from the long side, tightly roll the pastry into a cylinder, brushing off extra flour as you go.
Cut the cylinder into discs about 1 centimeter thick. Roll each disc into a thin circle. Spread the surface with zaatar-olive oil mixture. Repeat for the remaining pastry, or freeze the other half if one batch is enough.
Bake in a preheated 420F oven for about 10 minutes.
