This sandwich is a very worthy trend that exploded over social media. It is the invention of a tiny sandwich store somewhere is Syria, and makes the best use of typical Levant flavors that are found in any Arab household.
Got pita, lebna, olives, olive oil, zaatar, cucumber, and tomato? Let's go.
Ingredients: serves 1
1 large Lebanese thin pita bread
olive oil
zaatar
2 Tbsp lebna
1 Tbsp slices olives
1/2 cucumber, slices
1/2 small tomato, slices
Method:
Split the pita through the seam to have two full circles. One one of the circles, brush with olive oil and sprinkle with zaatar. Bake in a 350F oven for about 8 minutes until golden brown and completely toasted to a crisp. Meanwhile on the other side of the bread, spread the lebna and sprinkle with the olives, tomato, and cucumber slices. You can add salt, chili paste, and mint leaves also.
When the crispy side of the bread is done, lay it over the unrolled lebna side of the bread, then break it up into tiny broken pieces, directly over the dressed side of the bread. The roll up the bread to secure the filling of dressed lebna covered in shattered crispy bread, and enjoy immediately.
