French toast is seriously over-glorified. All it is, is a simple technique of soaking stale bread in an egg and milk mixture then frying in a pan. It is then usually flavored with cinnamon sugar. This zaatar and cheese version is my absolute favorite play on French toast, by far.
The bread is first dunked in the mentioned egg mixture, then coated in the best Palestinian zaatar. Once one side is seared, it is flipped, filled with mozzarella cheese, sealed, then seared again from the outside.
Ingredients: makes 2 sandwiches
4 slices toast
2 eggs
1/4 cup milk
salt and pepper
3 Tbsp zaatar mixture
2 Tbsp olive oil, plus more to sear
4 thin slices mozzarella cheese
Method:
In a bowl, whisk together the eggs, milk, zaatar, olive oil, and some salt and pepper.
Dunk two slices of toast to completely soak and coat on both sides.
In a hot pan set over medium heat pour some olive oil and sear the slices of toast on one slide until golden. Flit both slices, place the cheese on one of the toast and flip on it the other toast to make into a sandwich. Sear the bottom of the sandwich until golden, then flip the sear the last side of the sandwich. While searing the last side, cover the pan to melt the cheese.
Repeat using the remaining ingredients to make another sandwich. Serve hot.
