504. Granola Cookies


Outrageous seems to be the norm these days. Some ideas are totally unthinkable, while others are intriguing.

Some examples? The (infamous) cronut. And then you have the weird but curiously intriguing popcorn cookies and potato chip cookies. These granola cookies run along parallel lines, but we just might be able to convince ourselves that they are healthier than their alternate options.
After all, they do boast whole grains and dried fruit, which is more than one can say for the potato chip cookies.
The amazing and inspiring duo at Love and Olive Oil gifted me their second book, signed and delivered.
It was so exciting because I never win anything at all, and it was a long shot that they deliver to outside of the United States, but like I said, they are amazing and inspiring. Their blog well deserves a visit.
Their book, Breakfast for Dinner, gives us exactly what the title says, and so much more.


Ingredients: makes 40

2 1/4 cups flour
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 cup butter, soft
1 1/4 cups brown sugar
3/4 cup sugar
2 large eggs
1 1/2 tsp vanilla
2 cups granola
1/2 cup oats
1 cup chocolate chips
1/2 cup dried berries or sultanas


Method:

Preheat oven to 350F.
Sift together the flour, salt, baking powder, and baking soda; set aside.
Using the paddle attachment, beat the butter and brown sugar and regular sugar until light and fluffy.
Add the flour mixture, mix until incorporated.
Add the granola, oats, dried fruit, and chocolate chips.
Form into one-tablespoon sized discs, and place well-space on a baking sheet.
Bake for 12 to 14 minutes, until cookies are puffed and edges are slightly golden.
Let cookies cool on the baking sheet before removing, otherwise they will break apart (they harden as they cool).
