2101. Zaatar Chicken Escalope

Chicken escalope is everyone's favorite food. Kids call it nuggets, the worldly call it schnitzel. Whatever you call it, a breaded piece of fried chicken is always welcome. This version adds some zaatar to the crumb, adding another level of sophistication and flavor to this well loved dish.

Ingredients:

2 to 3 boneless, skinless chicken breasts (pounded thin or cut into cutlets)
½ cup all-purpose flour
2 large eggs (beaten)
1 cup breadcrumbs or panko breadcrumbs
1 to 2 tablespoons za'atar spice blend
salt and pepper
oil for frying

Method:

Slice the chicken breasts horizontally to make thin cutlets. Place them between parchment paper and pound with a mallet until they are about ½-inch thick. Season both sides with a little salt and pepper.
Set up your dredging station in shallow bowls:
• Bowl 1: All-purpose flour
• Bowl 2: Beaten eggs
• Bowl 3: Breadcrumbs combined with the za'atar spice blend, salt, and pepper.
Dip each chicken cutlet first into the flour (shake off the excess), then dip into the egg wash, and finally press firmly into the za'atar breadcrumb mix to coat both sides.
Heat about ⅛ to ¼ inch of oil in a heavy skillet or cast-iron pan over medium-high heat. Fry the chicken cutlets for 3 to 4 minutes per side until golden brown and cooked through.
Transfer the chicken to a wire rack or paper towel-lined plate to drain excess oil. Serve warm with lemon wedges or a fresh salad.
